If you’re a subscriber to Yeotown Life, you will have seen our video of Julia cooking our much heralded Chestnut, Cranberry & Cashew nutroast that we often serve to our guests at Yeotown. The great thing about this delicious little loaf of goodness is it’s not only great as a holiday addition to, or as a substitute for your normal turkey fare, it is great anytime of the year. Add a few of your favourite green veggies or a side of roasted root vegetables and you have a perfectly satiating, healthy, hearty meal.
Ingredients:
Serves: 4/6
Equipment Required: Block Grater, 2lb Loaf Tin, Baking Paper, Spatula
Ingredients:
1x Medium Onion
2x Cloves Garlic
150g of Pinhead Oatmeal
120g of Blanched & Pealed Chestnuts
50g of Fresh Cranberries
100g of Cashews (Dry Roasted)
1x Medium Parsnip
Tsp of Mixed Herbs, Thyme or Sage
Tsp of Garam Masala
1/2 Tsp of Mild Chilli
Black Pepper
Juice of Half a Lemon
Tsp of Coconut Oil
For the Stock:
2x Tsp of Gluten Free Vegetable Stock (Marigold Bouillon is an option)
400ml Boiling Water
*Begin by melting the coconut oil in your frying pan and then add the finely chopped onion & grated garlic, fry until golden brown.
*Add the oatmeal and stir until it has soaked up all the oil and begins to toast until golden. Keep stirring to ensure the oats do not burn.
*Once oats begin to toast, add fresh herbs.
*Then add stock mix and stir until it begins to turns into a porridge like consistency, leave to sit and thicken.
*Now toast your cashews, either in the oven for a few minutes or in a frying pan being careful not to burn them.
*While your cashews are toasting, add your grated parsnips to the mix along with the roughly chopped cranberries & chestnuts, then stir.
*Add the juice of half a lemon along with your roasted cashews and give your mix one more stir.
*Add the entire mix to your lined loaf tin and firmly press down with a spatula or spoon, then place in your refrigerator to chill for a couple of hours.
*Once chilled and firm, roast in your oven for 40 minutes at 170 degrees
